- Integrity. In other words, there should be no cracks or chips on the dishes, otherwise it will be dangerous to store food in it. Get rid of damaged containers.
- Take sterilized containers with clean dry gloves or a towel. The container is hot after sterilization, so you can simply burn your hands.
- After sterilization, place the jars on a dry, clean cloth with the neck down so that harmful microorganisms do not get into them as they cool. You can turn the container right before filling.
- The containers should be filled with a blank, the temperature of which is close to the temperature of the container. Doing so will crack the glass and ruin your products and cut your hands.

Sterilization in boiling water
This is one of the most common home sterilization methods for glassware. It is necessary to take a wide saucepan, fill it with water less than half the volume, and immerse the jars filled with water there.
After that, bring the water to a boil on the stove. Usually sterilized in a saucepan containers with a volume of up to one liter. The operation time is 10-15 minutes from the moment the water boils.
In the oven
The next method, which is widely used by experienced housewives, is the sterilization of glassware in the oven. The difference between this method is that the use of water and steam is excluded. This is dry sterilization.
It is necessary to put the jars in a cold or slightly warmed oven. If the containers are dry, then they are installed upside down. Banks with residual water should be placed upside down to evaporate. You can install several cans of different sizes at once. Place containers on a wire rack or baking sheet. The oven must be heated to 150 degrees. Ferry
A method of container preparation that has been proven for decades is to sterilize it over steam. This method was also used by our grandmothers. You need to take a pot or kettle.
You will also need a special stand, which can be purchased from your local hardware store. The base has a recess for one or more jars, depending on the width of the pot. In the absence of a stand, you can also use a simple steamer or mesh to prevent oil splashing when frying.
If you are using a regular (non-electric) kettle, then a stand is not required. It is necessary to pour water into the kettle and, instead of the lid, set the jar upside down.
The processing time of the dishes from the moment the water boils depends on the volume of the container and ranges from ten minutes to half an hour.
In the microwave
The most modern tool for preparing cans for canning is a microwave oven. This method has many advantages. The most important of these is high speed. At the same time, there is no steam in the room in which the treatment is carried out.
To process the dishes in the microwave, it is imperative to pour some clean water into it (up to two centimeters from the bottom). Do not put empty containers in the microwave oven. Sterilization is carried out at maximum power for 1-8 minutes. During this time, the water will boil, and the steam will destroy the microbes on the surface of the dishes.
The amount of crockery to be placed depends on the volume of the microwave oven. Two-, three liter cans if they do not fit, you can put them on their side. In this case, the water must be poured into the jar so that it does not spill out.

Dishwasher safe
This is the simplest and most effective method, but not all homes have such a device.
The jars are placed on two pull-out dishwasher shelves. Then the machine must be set to the mode with heating to the highest temperature and turned on.
Advice! Dishwashers are much more spacious than microwaves and ovens. However, it is often impossible to install water heating in them above 80 degrees, or even less. Therefore, there are some doubts about the quality of sterilization by this method.
You can prepare food for preservation while the dishwasher sterilizes the glass container. The longer this process takes, the better.
In a cold way
A known method of processing containers for canning with alcohol. Is it possible to find other similar means of cold sterilization in the home environment? We recommend using vinegar.
It is necessary to take a half-liter jar, pour cold boiled water into it up to the shoulders. Then add 7 tablespoons of 70 percent vinegar. You will get a sterilizing solution.
The container, as usual, must be thoroughly rinsed, then pour the resulting solution into it, close the lid and shake well for twenty seconds. After that, the solution must be poured into the next jar and the process must be repeated.
After sterilization of the container, it is necessary to hold it upside down for some time so that the liquid glass from the walls. The prepared solution is enough to process fifty cans.
This requires a wide pan with a clean towel or any cloth on the bottom. Then you need to arrange the jars filled with food and covered with lids so that they do not touch each other. After that, you need to carefully pour cool or lukewarm water into the pan, so that the water does not reach the lids by about two centimeters. Then you should bring it to a boil.
Advice! When pasteurizing, do not put cans on the bottom of a pot of boiling water. The temperature difference may cause the glass to crack.
The processing time depends on the volume of the cans and is approximately 10-15 minutes. Can be sterilized for longer.
Then the containers with the contents must be carefully removed from the water using a special device, which is available on the market, and rolled up with a machine.
When the cans are sterilized, filled and rolled up, they must be turned over and placed on the lids. It is recommended to place hot canned food on a wooden surface. In the oven
Using the oven, you can process containers of different sizes at the same time, which significantly saves time. In addition, this method allows the sterilization of metal lids. However, it is worthwhile to first pull out the rubber inserts - they deteriorate under the influence of high temperatures.
To sterilize cans in the oven, place clean dry containers upside down on the wire rack. Close the door and turn on the oven at +150 ° C. The processing time depends on the volume of the container and its quantity, but on average it is 10–25 minutes.
In the microwave
The modern method of sterilization involves the use of a microwave oven. The main advantage is the absence of steam in the kitchen and the ability to process several containers at a time.
To sterilize, follow simple steps: pour a little water into clean cans (2 cm from the bottom), put the container (if only one large one fits, put it on its side), select a mode with a power of 700-800 W and turn on the microwave. The processing time depends on the number of containers and their dimensions. It will take 2 minutes to sterilize one small container, and 4–5 minutes to process one 3-liter jar or several small ones.
Boiling
A fairly simple and effective sterilization method is boiling. Fold the jars into a large bowl and pour the water so that it is completely covered with it. Transfer the containers with gauze or thin towels to avoid contact and possible impacts. Bring the liquid to a boil and maintain this mode for 15 minutes.
Sterilization with blanks
The microwave oven can be used to sterilize already filled cans. This method is suitable for preserving whole fruits. Fill a container with vegetables and half-fill with brine. Close the capron lid and put in the microwave for 2-3 minutes. Then take out the jars, top up with boiling brine and roll them up with metal lids.
Sterilization of filled jars is suitable for preserving vegetables.
You can properly sterilize jars with blanks by boiling. To do this, prepare a large container (saucepan or basin), cover the bottom with a towel and pour in some water. Place jars filled with vegetables or berries. Make sure that the temperature of the water in the basin and containers with conservation is approximately the same, otherwise a sharp drop can lead to the glass breaking. Bring liquid to a boil and sterilize for the period indicated in the recipe.
Processing can also be carried out in the oven. To do this, warm it up a little, place containers with blanks with the neck up on the wire rack and bring the temperature to +120 ⁰С. Sterilize the jars for 10-20 minutes and then close the lids.
Other methods
There are others, lesser known, but the same effective methods proper sterilization of cans at home.

- Leave in the oven for 15 minutes. This is the time for cans with a capacity of no more than 700 grams. For three-liter cans, more time is required - 20-25 minutes.
How to properly sterilize steam cans
Too convenient way sterilization of containers when only 1-2 jars are needed. It is also convenient that you fold the lids into the pan, put a sieve or colander on top, on which the jars are sterilized. But I'll start talking about this method in order.
